Do you like peas? some people may be lazy to cook beans because it takes a lot of time. To cook these black-eyed beans we need about 5 hours. Really long, isn’t it?

- 2 Ham hocks or ham bone
- 1 lb Black-eyed peas, dried
- 1 Onion, medium
Baking & Spices
- 1 tsp Black pepper
- 1 tsp Salt
- 1/4 cup Butter
- 4 cups Water
There are 2 ways for beans to get soft quickly. First you can boil it on high heat or soak it first overnight. I prefer to soak it overnight for about 10-12 hours. After that drain and rinse with cold water and drain, set aside.
In the large stock pot or skillet, heat butter on low-medium heat and sauté it until smell good and tender. Add 4 cups water, ham hocks, one teaspoon salt, pepper and drained peas to pot. Cover and simmer for 4 hours over low-medium heat. Stir occasionally.
Remove ham and cut ham into small pieces. You can trim of skin or cartilage ham. Then add ham pieces back to peas and stir again. Add more salt to taste then simmer on peas.
If you prefer more liquid, you can add water and cook until done. Don’t forget to taste it first and chill.
I usually serve it with white rice and lots of fried onions on top but you can serve them on their own as well.
